Week 231

Happy Friday! We have another great week of dinners and one oatmeal bake that our kids LOVED. It presents like cake, and gets adorned with yogurt and peanut butter and an extra drizzle of maple so it feels really special for something that can be made in advance. These burgers feel like a change to the usual, a handful of you wanted a recipe for those Chopped Greek Salads I had posted on Instagram that I was making to deliver to some friends going through a hard time, so that is on here too. Lastly, we're roasting some gnocchi (they need to be the fresh kind, not dried!) and whizzing up a quick pesto for another sheetpan meal. I know someone will ask if you can do it with those frozen Trader Joes cauliflower ones that are popular, and I am not sure. They may just need more time in the oven, but you'll have to report back!
