We're going to manifest Spring into our lives despite this big storm. A little bit of strawberry and also a warm soup - such is March! We all love a one-pot, make-ahead meal during the week and this orzo stew (with or without sausage) will be the one to pick for your busy (or coldest) night this week. We usually do slabs of salmon and apparently my kids were more into trying it in these caramelized cubes. I think I may actually prefer it this way too. If you are not a salmon person, chicken or tofu would be easy substitutes. For your packable lunch requests, we have a green quinoa salad that lasts for days, and can also be bulked up with more protein. Lastly! A very simple afterschool smoothie with a big drizzle of honey to compensate for the imperfect berries and to make the kids happy ;)
