Hey friends! May is so crazy, I will be glad to see it go, honestly. The end of school mixed with 7 family birthdays and mothers day has left us with plans constantly and I am tired. We are going out with a bang this weekend for Curran's 9th birthday and having a campout sleepover in the backyard with a few of his buddies from school. We are firing up the pizza oven and making s'mores and I borrowed a large tent from a friend and I don't expect people to be sleeping much. I'll hand them all back to their parents after breakfast and am so grateful we get an extra day to recoup this weekend. Hope you have some fun plans in motion for the holiday weekend! We do have this delicious Honey Corn Cake that would be perfect for a BBQ of sorts.

Otherwise, it is more dinner plans, and I promise we'll start moving away from the oven time next month. Even if it is warm where you are, this Thai Meatball Soup was a favorite (no oven time, just the stove!) and while lots of chopping, comes together pretty easily. A delicious sheetpan of things to stuff in a pita and some kid-friendly shells for the pasta lovers in your life. Please share what you end up making from this menu or the archives!
