Week 248

We are officially off school! Both a celebration and a bit of mourning because I love the school schedule and my kids enjoy going so it's a bit of all of it. Work continues and they have lots of camps and we're heading to Zion next week so there are things to look forward to. Curious of your plans! A handful of you mentioned camping recipes so that will be on my radar. However, many of you are experienced camp cooks and I am not so please don't hesitate to share with me or on our SKCC Facebook page, meals that you enjoy while camping! Should you not be camping this next week, we have some different recipes for you. There is this teriyaki burger, which does have a few steps for condiments, but there are shortcuts in the headnote too. They went over well with the kids! We also have a lentil salad that you can keep in the fridge for the week and snack on for lunches, because it holds up well with the legumes and cabbage. We'll also throw a tumble of things on the grill for that grilled cobb salad and then make a big batch of this snack mix, which is like a leveled up Chex Mix. You'll love it and it lasts quite a long time in an air tight container (would actually be a good camping snack, speaking of). Delicious things for your week!
