Happy Friday! Even though you may be burgered out, the white bean version this week is something different. I like having veggie patties on hand for quick lunches. I made these meatballs for a girlfriend who recently had surgery because we find meatballs easy to reheat, pretty kid-friendly around here, and one way to add in some veggies with the obvious addition of zucchini in there. Like little porcupines. I also made a quick version of a crispy goat cheese salad. When I've had something like this at a restaurant, I can tell the goat cheese mixture has egg and breadcrumbs in it because it holds together well with the heat (also likely deep-fried). To make things quick, I just breaded the outside and crisped the rounds in a pan, for the same idea and flavor. You could add any protein there to fill out the salad. Lastly, a watermelon mojito that just takes a bit of fruit smashing and some shaking. You could make a simple syrup but you all requested easy and quick this summer so I am cutting some corners for you!
