Week 258

We just got to Mammoth Lakes, CA yesterday as our last hoorah this summer before this kids go back to school next week. We are with some of my family's longest time friends and it is just stunning up here. It's a bit of a drive to get here from our house, but the boys love mountain biking and I'm happy to hike slowly with friends and kids and go out on a boat for some likely unsuccessful fishing. It really did fly by, and yet I know many of you have a few more weeks of summer so dismiss my sad farewell. We definitely packed it in this summer, so in some sense, the routine of school feels like more of a relief for me than summer does. As far as food goes, we're a little all over the place with options this week. We loved this salad - but I will warn you it's a decent amount of prep and shopping. Should you find yourself in need of picnic food or one whose leftovers fare well. This is the salad. Also great with chicken or tofu - I hope you always know these recipes can take tweaking. I don't generally do two beef things in a week butttt I'm a little behind and this is how things shook out. The Thai salad is your one to swap a protein though! We have some egg cups to prep ahead for busy mornings, another crunchy cabbage situation and then another take on a meatball...on a stick ;) Always trying new things over here, so thank you for playing along! I wish I had lunchbox recipes for you but even after a pinterest deep dive, I just can't come up with much. I'll start a thread on our Facebook page that could be more communal since I am not much help with ideas there. Maybe since one of my kids is pretty picky, there isn't much that is easy to pack.
