Hey Hey! I'm up late this fine Thursday evening making a gallon of Aji Verde sauce for the Hispanic Heritage party at my kids school tomorrow. Our recipe here is actually lovely. It didn't totally multiply perfectly x15 buttt we're close enough. It made me think about how having those lovely sauces really do help make easy weeknight things like grilled chicken and roasted vegetables, so much more exciting. Definitely try the sauce! As for this week's menu, we have quite the variety. To honor meatless monday, start with the rice paper rolls. Order your papers today so they'll be here if you can't find them at your local grocery store (my Sprouts and Whole Foods carry them, they also go by Spring Roll Wrappers). You can roast the tofu and make your peanut sauce on Sunday to make quick work of things. While you are prepping in advance, just make the parfaits because you will be glad you have a few breakfasts ready for work or out the door for school. My kids love munching on this granola, even if they don't do the whole parfait thing. For your busy night, make the tostadas, because they are the quickest and you could smush the ingredients into a tortilla should you have picky kids. When you think people may sit down and enjoy a one dish dinner, perhaps with a glass of white wine and a good chat, try the chicken skillet situation. It would love a simple green salad on the side to flush out the meal. You have a great week of meals ahead!
