A menu for our folks eating more plant forward these days. I did fall hard for this sandwich. Take aways being: buy the bread day of so it's super soft. Even if you don't like mayo, it needs it, so maybe try veganaise as an alternative? I know avocado isn't banh mi proper, but I liked having more moisture in there. The pot of beans has been known as both a side and a simple main. I brought them to a new years dinner but topped them with a panko and parmesan topping instead of melty cheese and it was a great side. I also caramelized some fennel in there with the leeks so there was more vegetable texture happening. Another bowl to which you could add any protein - salmon, chicken, steak, a good sausage. I know I always say that butttttt it's true. We're often just looking for a fun home for our proteins.
