Week 289

hi hi! Coming in a little delayed this morning after dealing with a sick kid all night and morning. We're ready for a sunny spring dry out over here! Today is a new day and I am trying to gift myself the weekend to make food things just for fun, not work, and I'm looking forward to it. I mean I ammmmm prepping meatloaf today after listening to the new Deb Perelman podcast about it and that is a protein I need to make use of. Tomorrow I want to make a chocolate and peanut butter tart, maybe like this one, but with a chocolate crust. I also need to make a bigger dent in my book, [Lady Tan's Circle of Women}(https://amzn.to/49cHATv), before it's due at the library. I always do this, I get the popular books on Libby that need to be returned within 2 weeks then end up having to buy it because I want to finish it and not get back in a months long wait list for it. The fix is more time to read :) Pass on any favorites! We do have some lovely dinners planned for you this week. I love love love this soup. It is light and fresh and you can fill it out with some browned sausage (some mom friends and I figured out that our families are more positive about soup if there is meat in it). Some tacos of course and a stewy beef that can sit in the crock pot or Dutch oven should you need something to just be ready for ready - we served it with rice, asparagus and avocado. Lastly, a little random condiment for you. I had some gorgeous meyer lemons and wanted to use them in a sweet, so this curd has been a toast topping with whipped cream cheese for the kids. It does sound a little random when I type it out, but it works!
