Week 292

Good Morning!

We went from sunny weather to expecting rain this week and this menu has a little bit of everything to cover us. Spring has so much more color and produce to choose from, I love cooking this time of year after a lot of root vegetables and long cooked items. We have a delicious avocado ranch dressing to go with this salad, a curry filled with vegetables and these enchiladas that my family said were the best I ever made (there is a splash of cream in the green sauce and that made them so luscious!). It's also an excellent dish for hosting because you can do so much in advance! Lastly, my girl wants to bake this weekend, so I figure a banana cake could be both a breakfast treat and for well, anytime.
