Week 68

Soup! I love a good soup and no one else in my family likes it so I hope at least a few of you guys do so I have a reason to make it. Ashley’s green pozole below is delicious. This week, we’re making an Asian-style meatball with a simple side of sesame broccolini and my kids favorite pancakes as of late. And “lasagna style” spaghetti squash is really the only way I cook it, so we’re bringing that one in this week too.

I know things are ramping up this week getting ready for the holidays, but I hope you are feeding yourselves well when possible. Each of these meals makes for great leftovers. If it’s any consequence for your planning, the Christmas week menu is a nacho bar with homemade cheese sauce and optional beer braised pork shoulder, a butternut squash lasagna with simple greens, a roasted vegetable bowl with “Bitchin Sauce”, and a jammy refresh on our house favorite cinnamon rolls. It’s a yummy week, followed by a fun NYE menu!
