Hey friends! A few weeks ago I asked what your favorite SKCC recipes were from 2019 and you were ALL over the place. I know many of you asked for that list, and I am going to make it a little easier to navigate with the site upgrade at the end of the month. I’ll make a TOP TEN list for both the vegetarian and non-veg recipes so those are easy to reference. The most repeated answers were the turkey bolognese and turkey butternut chili, but we’ve repeated those, so I went with the next in line.

Wild salmon season is through the summer, so know that anything “fresh” at the market will be either farmed or previously frozen. I buy the wild, frozen filets from Costco because I don’t really need the store to thaw the fish for me. I’d rather do that right before I need it. The turkey burgers are delicious and classic and if you are being extra January-ish about your diet, wrap the situation in iceberg or butter lettuce for a low-carb wrap situation. The winter salad makes a strong case for a salad being actually filling. Add shredded chicken or beans if you wish. And the cookies! I am so glad you all like the chocolate almond meal cookies because they do not even last a full 24-hours in our house.
