Week 78

Friday! It was nice to have a short week. What did you guys end up revisiting since we had the Valentines menu taking up most of the space here? Not that you can’t eat risotto or scallops on a “normal” day.

I think you may find some favorites this week. Working backwards, my kids have been inhaling these banana bars! They are meant to be thin and portable, more like a “bar,” so they’ve swiped peanut butter on top or dipped them in plain yogurt. There are modifications to make them gluten free or not but most importantly: make sure your bananas are extra extra mushy and brown! Makes all the difference. I promise.

The barely creamy broccoli pasta is also quick and family friendly, the coconutty fish feels extra impressive for a weeknight meal (and so light and healthy! Can also be tucked in a taco!) and the veggie chili… can’t wait to hear your feedback on that one. Everyone prefers their chili so differently, I hope I hit the mark for a few of you ;)
