Hey friends! These past few weeks have been a little tricky to balance, as I know we’re all in different circumstances with what is going on in the world. Some of us are finding ourselves with more time to cook, or wanting to try new things, while others are shorter on time while working from home and/or having children around at all times. I am trying to do a little bit of both, and want to point you towards your archives to work in meals that may work with the food you’re looking to use up.

We have an easy lentil soup which reheats well for lunch and a peanut sauce that is made of mostly pantry staples and works well on nearly any protein or vegetable you’re looking to use up. The curried beef is another meal that is easy to stretch. This one was a gamble with my kids but they liked it with pita bread! Here is a homemade recipe that’s worked well for me.
