Week 148

Hey hey!

How was the week? I saw a few comments on the FB group of folks being a bit apathetic towards cooking lately and I feel similar. It's nice out, we're not getting home from our day until after 6pm and I need quicker, no-fuss meals. It certainly feels different than the school routine. What sort of meals do you tend towards in the summer?

This week, we have guest recipe contributor Ashlae Warner with some really straight forward meals. A flavor-packed burger, some vegetarian spring roll bowls that honestly could take any protein swap, a summer salad to show off your ripe peaches and some strawberry shortcakes with a coconut milk cream. Obviously real deal whipped cream works as well, but these can easily be made vegan/dairy-free with a vegan butter and the coconut whipped cream.

Next week, we have grilled veggie nachos for a crowd and a summer snacking board that is perfect for the 4th of July weekend with some really delicious dips. I am also working on a "grill week", and a "summer entertaining" week that will lay out a whole spread and make ahead tips to pull off a mediterranean-esque dinner for friends (vegetarian and otherwise!).
