Hugh and I hid these Scotcheroos underneath packages of lettuce so the kids wouldn't see them in the fridge and we could eat the whole pan at our leisure. The plan did work and they are so good. I'll make more to share as soon as I find more Brown Rice Syrup. That stuff is not easy to find! I will save you the trouble and tell you it is not at Sprouts and twice the price on Amazon as it is at Whole Foods which is really saying something. You will see notes in the recipe that both honey and maple will work, I just always find that the rice syrup yields a snappier end product. There is also a gorgeous wedge salad, a one pot Indian chicken dish that gets gussied up with coconut yogurt and rice and naan to make for an easy dinner. The mojo meatballs are a crowd favorite because SAUCE! Obviously the sauce.

I know many of you are heading into a Spring break and I hope these meals will sustain your week if you find yourself staying in town. I put a few Easter brunch ideas on Instagram and will post more through the week and on Friday here. Smashed Potatoes! Lemon Bundt! Strawberry Bars! We will welcome all the spring food things.
